Let There Be (Vegan) Pie [digital]

Join us for The Works' online pie making series starting with an introduction to vegan pie making! Whether you are vegan, dairy free, gluten free or you just enjoy eating delicious pies, this class will teach you how to make a decadent pie from scratch using all plant-based ingredients. What will we make? A classic double dark chocolate cream pie topped with strawberry-shaped roses. This pie is decadent, velvety, and rich and will satisfy your strongest chocolate cravings without all the processed sugar! Throw on your apron and get messy with us as we visit topics like:
  • An introduction to vegan dessert making through raw pies
  • The benefits of using whole unprocessed ingredients and alternative sugars
  • The role that each ingredient plays in both texture and flavor
  • A full step-by-step demonstration including downloadable PDFs with bonus pie recipes
Once you become familiar with the pie filling you will make in this class, you will understand how to bind, flavor, and texturize nut-based creams for other recipes, including vegan cakes. Come make with us!

Length

The video for this course is 28 minutes long, split across 5 modules. Participate live, or pause and work on the steps independently. Each of our digital classes equate to approximately 90 minutes of active hands-on time.

Materials

To follow along with the video at home, you'll need the following ingredients and equipment.

Ingredients:

  • 5 cup whole raw almonds (walnuts or pecans work too)
  • 2 cup dates
  • 1/3 cup cacao nibs (chocolate chips work in a pinch)
  • 1/2 cup + 2 tablespoons cocoa powder
  • 6 tablespoons + 1 teaspoon maple syrup
  • 2 cups raw cashews
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt or kosher salt
  • 1 cup almond milk (any other milk works too)
  • 2 tablespoon coconut oil (can use butter or canola oil)
  • strawberries for decoration (optional)

Equipment: 

  • 9-inch pie pan
  • Food processor (If you don’t have a food processor, you could use a blender for the filling and enjoy it as a decadent dessert without the crust, or with a store bought crust. Unfortunately, a regular blender doesn’t cut it for grinding the crust ingredients as fine as they need to be. If you have a ninja blender with multiple blades, that doubles as a food processor.) 
  • Small spatula

  • Toothpick (optional)
  • Pairing knife (optional, for shaping the strawberries)
