BYO: Gazpacho

Equipment:

  • Cutting board

  • Kitchen knife

  • Small bowl

  • Blender, food processor or mortar & pestle if you’re looking for a workout

  • Tupperware for cooling

  • Measuring Spoons

  • Spatula

Ingredients:

  • 1 cup honeydew melon
  • 1 cup fresh pineapple
  • 1 large or two medium red ripe tomatoes, heirloom or beefsteak
  • 2 large ripe peaches
  • 1 pint + ½ cup strawberries
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 1/2 cucumbers
  • 2 stalks celery
  • 1 large or two small fennel bulbs
  • 2 shallots
  • 1 tablespoon mint
  • ¼ cup basil
  • 1 tablespoon cilantro
  • 1 jalapeno
  • 3 cloves garlic
  • ¼ cup + 2 tablespoons red wine vinegar (substitutes: sherry, white balsamic or champagne vinegar)
  • ¼ teaspoon Red pepper flakes (optional)
  • 2 tablespoons almonds
  • 1 tablespoon sugar
  • Salt & pepper
  • Extra virgin olive oil, for drizzling
